Having not spent a term home from school since I started (last summer I was in Japan), I never really got used to being vegan and always having to cook for myself. Sure, cooking for myself is easy, but at the frequency of two meals a day it can get a little troublesome trying to find new things. My solution during break was always the same thing: cook pasta for lunch and pasta for dinner. Usually the same kind and always in the same way.
Well, since I’m home for good (3 months) this time, that’s just not going to work out. Especially now that I’m cycling, it’s become rather boring and nutritionally unsatisfactory to eat nothing but pasta day in and day out. Every so often I’ll mix it up with things like gnocchi, but at the base of it, I’m not really escaping the problem. In fact, the oven right now is full of baking tater tots, which, along with unsweetened ice tea, will suffice for my 2pm lunch.
Now that I’m “becoming” an “adult,” I’m faced with those terribly important problems of shopping for groceries and cooking with variety. I certainly can’t cook my favorite recipes every day because there will be repitition, but on the other hand, I’ll have to know what I want to cook so I’m not going to the store to buy ingredients every day. What is a boy to do?
Anyway, starting today I’m going to work on getting my nutrition back on track, and I hope to share that with you folks. Mehbe it’ll work out fine and I’ll no longer be bored to death with what I’m eating, and mehbe it won’t, but that remains to be seen! Does anyone have advice for a fledgling adult like myself?

You’re doing well already by the sound of it..being a vegan “fledling adult” is way ahead of what most people eat. Just make sure you eat a wide variety of dried nuts and fruit and seeds. They are good for when your on the go, too. Apparently if you mix sunflower, sesame and pumpkin seeds together it makes a complete set of proteins. Beans are important too. Marinated tofu is good too, fried or baked.
If you ever meet any other vegans ask them their favourite recipe.
try reading up on some recipe sites online… just google, “vegan recipes free” or something to that effect.
Also, i recommend making a big batch for lunch and using leftovers that night. and each day or two make a new dish. its not as exciting but i found it helps cut down on having to come up with ideas all the time.
Try new things. often the reason you are finding it hard for new recipes is cause you are thinking of the same ingredients. Seiten, Tofu, Pasta, Sandwhiches, all vegi, rice, about a million dififerent kind of vegi burders with a million toppings, pizza, mac and cheese, etc etc. there is a lot out there.
Bean burritos everyday! That’s my favorite.
If I were single I’d probably have them about everyday. Luckily my wife helps keep me eating other stuff.
I don’t know about being an adult yet but I am old. Vegan eating gets easier when you stop obsessing about food. I wrap tortillas around most anything vegetarian. I abhorred lentil soup until I tried this fast eastern lentil dish. 5 cups of water, 2 cups red lentils, 2 med onions chopped, 2 tablespoons Patak’s Mild Curry Paste(highly recommend this brand for its flavor), 2 tablespoons tamari or soy sauce. Put everything in a pot, boil for 5 minutes, then simmer it for 20-25 minutes. This tastes fabulous!!!!! And this much would last in the fridge for a week for one person. Guaranteed. I could bore you with how nutritious this stuff is…just make some. Bike til you’re dead.
