Vegan eating gets easier when you stop obsessing about food. I wrap tortillas around most anything vegetarian. I abhorred lentil soup until I tried this fast eastern lentil dish. 5 cups of water, 2 cups red lentils, 2 med onions chopped, 2 tablespoons Patak's Mild Curry Paste(highly recommend this brand for its flavor), 2 tablespoons tamari or soy sauce. Put everything in a pot, boil for 5 minutes, then simmer it for 20-25 minutes. This tastes fabulous!!!!! And this much would last in the fridge for a week for one person. Guaranteed. I could bore you with how nutritious this stuff is...just make some. Bike til you're dead. :-) I don’t know about being an adult yet but I am old. Also, i recommend making a big batch for lunch and using leftovers that night. and each day or two make a new dish. its not as exciting but i found it helps cut down on having to come up with ideas all the time. Try new things. often the reason you are finding it hard for new recipes is cause you are thinking of the same ingredients. Seiten, Tofu, Pasta, Sandwhiches, all vegi, rice, about a million dififerent kind of vegi burders with a million toppings, pizza, mac and cheese, etc etc. there is a lot out there. try reading up on some recipe sites online… just google, “vegan recipes free” or something to that effect.

Just make sure you eat a wide variety of dried nuts and fruit and seeds. They are good for when your on the go, too. Apparently if you mix sunflower, sesame and pumpkin seeds together it makes a complete set of proteins. Beans are important too. Marinated tofu is good too, fried or baked.
