I’m not a Christian, but my mother is so I celebrate Christmas with her. However, this year I didn’t really think about what to cook. Call me stupid for not thinking in advance, but I suppose nothing interesting will come of Christmas dinner.
So, I ask you: what do you vegans usually do for Christmas dinner? Feel free to share recipes and advice,

Hmmm… nothing special. My family has always just eaten whatever on Christmas day. This year I had a baked sweet potato, plain brown rice and apple stuffed acorn squash.
i know this is a little late – but we always have lasagna – i make a vegan version. however, i made a seitan roast for thanksgiving that would also be good for xmas dinner. it ended up being pretty cheap to make, partially cause i had a lot of things already. i think the roasts cost me about $5 total!
